It would be the sight of an entire family gathered around a large shared platter. In countries such as Senegal, Mali and The Gambia, this scene is part of everyday life, and understanding it means understanding far more than just the food.

In this part of the world, eating together isn’t reserved for special occasions—it’s simply the norm. Meals are served on a large platter placed in the centre, with everyone sitting around it. Rather than having an individual plate, everyone shares the same dish, usually eating from the section directly in front of them. Sharing a single platter breaks down barriers and turns every meal into a truly communal experience.

Another long-standing tradition is eating with the right hand. Far from being informal, it follows its own etiquette. A small portion of rice is gathered together with the sauce to create the perfect mouthful. In many homes, pieces of bread or small balls of rice are also used to scoop up stews, ensuring that nothing goes to waste and that every bite is full of flavour.

Rice is the foundation of many meals, forming the base of some of the region’s most iconic dishes, such as maffe, with its rich and creamy peanut sauce. These recipes are cooked slowly in large pots designed to feed many people, because the goal is never to cook for just one person, but for everyone who may gather around the table.

Behind all of this lies a deeply rooted value: community. The shared platter is where family bonds are strengthened, guests are welcomed and stories are passed down from one generation to the next. Sharing a meal is a way of saying, you belong here.

At Mom Koumba, we believe this philosophy is one of West Africa’s greatest treasures: the belief that food brings people together and that there is always room for one more at the table. You don’t have to live there to embrace this tradition. Every time you place a dish in the centre of the table and share it with family or friends, you keep that same spirit alive—the spirit of one shared platter bringing an entire family together.

If we had to choose one image to capture the essence of West African cuisine, it wouldn’t be a particular dish or ingredient.
